Perfect juicy Roast Beef

Ingredients


1.5 kg Beef meat

100 g butter or olive oil

1 tablespoon heaped mustard

1 tablespoon ground black pepper 

2 tablespoons coarse salt

6 cloves garlic


For the Potatoes:


1.5-2 Kg small white Potatoes 

1 tablespoons salt


For the Gremolata:


1 cup chops parsley 

2 cloves garlic 

grated lemon peel



Preparation

Step 1

Heat the oven to maximally (250-270c degrees)

Step 2

Cook the potatoes with 1 tablespoon salt for 20 minutes, Strain, lightly mash, and place in roasting pan.

Step 3

Make 6 grooves 3 cm deep along the piece of meat and stick a whole clove of garlic in each groove.

Step 4

In a large bowl mix Butter ,mustard,salt and pepper.

Step 5

Spread the meat well with seasoned butter. Place the meat on a wire rack

above the potatoes, roast for 22 minutes to obtain roast beef with a Medium rare, 25 minutes for Medium degree of roasting.

It is recommended after about a quarter of an hour of roasting to mix the potatoes, for brown color.


Step 6

Prepare the Gremolata :

In a bowl,mix parsley,garlic and lemon zest. purified on potatoes about 2/3 of the amount.

You can also sprinkle on the meat. ( those who like)
